Savoury Muffins

A lunchbox filler or snack for a new mummy or those on the run!


I forgot about this recipe until I recently got tired of making sandwiches for my children. So have just made a batch (this recipe makes 12 muffins).


These delicious muffins could equally be a great snack for a new mum, or for those with little time to grab something healthy for lunch during the day.


The recipe contains Courgette, Ham, and Cheese. However you could replace these easily with Peppers, Mushrooms, Chorizo, or anything you like!


Recipe:

500g Coursely grated Courgette

2 tablespoons of Olive Oil

200g Leg Ham, diced

2 cloves of garlic

180g Cheddar, grated

200g Self-raising flour (can use gluten free flour mix too)

2 handfuls of Parsley roughly chopped

4 eggs

salt and pepper


Method:

Preheat oven to 180C fan or 200 conventional


Grate Corgette and squeeze out liquid, or place onto absorbant kitchen towel to absorb moisture


Put Oil into large frying pan and fry ham until lightly browned, then add onion and garlic and sweat for 3 mins


Tip the mixture into a bowl and add Corgette, Cheese, Flour and Parsley

Lightly whisk the eggs and add to the mix, stir and season


Line a 12 hole muffin tin with cases or spray/wipe each hole with oil and spoon in the mixture


Bake for 20 mins - or until puffed and golden (I needed to bake for about 25-30 mins for gluten free muffins, but keep an eye on them as every oven varies


Enjoy warm, or put into the fridge in an airtight container after cooking. You can freeze these for future use too.
